I echo the comments below--the first time (and only time) I used this it sent 1,245 emails overnight. (to about 400 parents) Oh yes that looks gret for our school, right?! Like we have no idea what we are doing. The set up makes no sense whatsoever...and there is no detailed KB article or anyting else to help us figure it out..
The reminders function on the forms is a mine field. Since it is difficult to know when the reminders will be triggered, I have defaulted to not using the reminders at all. I accidentally sent contracts to parents 5 or 6 times before I realized what was happening.
And can we prevent the system from sending more than one reminder in any given day? We seem to always mistakenly trigger multiple reminders when editing our reminder email text!
Being able to pick our own dates would be great. Add a little pop-up calendar so we don't have to count forwards or backwards from the due date, just select the exact date on the calendar to send the reminder.
I would love to be able to set up multiple reminders at once. We tend to Send on Activation to let them know the form is there, then send a reminder a week before the due date, then on the due date or when it's past due. It is a pain to have to go in and reset/retype the reminders each time I want one sent. I have to keep a separate document with the text of the various reminders, so that I can remember what the original one said... to make it easier to set up the next form. If they could all be in there at once, I could set it up and forget it.
For Forms where we incrementally add recipients throughout a year, an Initial Notification would be useful. Not so much a reminder.
We had enabled the Upon Activation reminder type to achieve this, but every time we added someone, any existing recipients who had not yet submitted form also received the email. So they were peppered with "reminders" throughout the year. The form wasn't really one where such nagging was to our benefit.
Not quite a priority, so I'm going to hold off submitting a new idea around this.
Past Due Options would be extremely helpful. At the moment - once the form is due - we change the due date to a future date and then send a "reminder" to those who didn't complete the form on time that it is past due.

Echoing what Oona McKnight wrote 9/13/17 - set up multiple reminders at the onset!

Add the option on 7 days after form activation/publish

Two new Past Due options were added this past winter.
