Please develop a list of what each task for each role allows that role to do

I'm a new administrator for our ON Products, and trying to make sure that employee roles are correct; some people seem to have access to certain functionalities that they shouldn't have. I am unable, however, to figure out what role/task to disallow to solve this problem. It's the same in  the opposite direction: if a user needs to be able to do something, I don't know what role/task to enable to do so.
