Ability to edit a submitted contract or a workflow for when a change needs to be made

We have a student who is being held back, and the family already had an online contract. We created a new contract, and deleted the old contract. But we can't save the contract, to show that they already made the payment.

Contract should show that 0 balance is due and it has tuition which is already paid. It will not let us edit it.

Please allow us to edit contracts for situations like this, or at least have a way to solve problems like this.
