Checkout Screen in School Store

I would like to be able to customize the Checkout Screen in School Store. I would like the user placing the order to have to enter the Student Name and Grade as a required field. We currently have the Notification say "Your order is not finalized until you reply to this email with your Students Name and Grade". This is not working as we are only getting about 40% of their users to respond. This is crucial as if you have a grandparent or family member that is not in the system paying for the item and inputting in their info they are not sure who that order belongs to. I would like to be able to customize the checkout screen as shown here http://screencast.com/t/UetCD8itlrq , would like to be able to rename a field or make a field required.

    We are needing the same thing in our school store. We have where they can enter Student Account numbers, but we enter the items into our POS with the student's names. I would really like for there to be a place where Student Names can be put in when the order is placed.
