Currently to edit learning profiles I believe the only option is to go to academics>grading>grades management>approve learning profiles> change the date window and category and then you can click "review" and edit. Not a single step in that list is intuitive. It's not even under "manage learning profiles" which is mind boggling. On a student's profile page there is an ellipsis menu on the learning profile, that should open a modal for editting that profile for people with correct privileges.
