Could you consider adding a field in Assessments in Edit Settings? Right now, a teacher can set the start day and time for an assessment to begin, and they can set the time limit of the quiz, but they cannot add a closing time to the assessment's availability. This is the corollary to the question about blocking a student. If I set a quiz to close at a certain time, it would not be accessible to an absent student.
